  3. The bubble that stays openHeat a pan properly, portion the batter, and flip once when bubbles stay open and the underside is gold.Medium heat, a light grease, a quarter cup each. Open bubbles and set edges are the timer. One flip, no pressing. The brown is Maillard, not caramel.
  4. The plate and the next batchJudge doneness, troubleshoot the next pancake, and optionally swap in buttermilk and soda.Springy centre, 160 F for egg safety. Fix heat or mixing on the next cake, not by beating the same bowl. Buttermilk plus a little soda is how diner gold happens.
