  2. Cheese wants to breakExplain why cheddar splits, assign jobs to cheddar, American, cornstarch, and evaporated milk, and add cheese only off the boil.Fat melts near 90 F, then proteins knot. Cornstarch and evaporated milk keep the truce. American is glue. Cheddar is flavour. Off the boil, then the cheese.
  3. The Saturday potRest pasta off the heat until barely al dente, butter it, fold in the two mixes, and treat crumbs as optional.Boil, cover, rest eight minutes. Do not rinse. Butter the tubes. Milk mix, then cheese mix, low heat, stir until one glossy coat. Crumbs are Farmer's lid, not Kenji's requirement.
  4. Serve it, save it, fix the next potServe while the sauce clings, reheat with milk to 165 F, refrigerate within two hours, and troubleshoot the next pot.Done is glossy and clingy. Pasta drinks the sauce overnight, so leftovers need milk. Two hours to the fridge, three to four days, 165 F to reheat. Fix heat or mix on the next pot.
