Dry rice first. Then color in small hot batches. Then aromatics and a teaspoon of sauce. Egg and peas last. Serving at once is part of the recipe.

Why does Kenji season the Saturday wok with salt instead of more soy sauce?

His teaspoon of soy is fragrance. More soy is more water, which is the thing you just spent the afternoon driving off the grains. Salt finishes the seasoning.

In the 1993 Virginia day-care outbreak, why did stir-frying the leftover rice fail to make it safe?

The CDC: spores survive cooking, cells multiply at room temperature, and the emetic toxin is heat-stable. The rice had been cooled on the counter, held unrefrigerated, and served without a real reheat.
