📘 How do you make a quesadilla?

You are standing at the supermarket freezer with a boxed quesadilla in one hand and a pack of ten-inch flour tortillas in the other. Someone wants dinner that stretches when you pull it, not a steamed pocket that tastes like the cardboard.

What you’ll learn

  1. Put the frozen one backChoose Kenji and ATK's weeknight flour fold over a freezer quesadilla, a two-tortilla sandwich, or a Mexico City masa fry, and scale a two-quesadilla cheese batch.Put the frozen one back. Flour, not masa. Tonight is Jack and a fold. Mexico City fry is later. An adult owns the pan. You shred and fold.
  2. The cheese has to meltPick a young melting cheese (Jack, Oaxaca, or Chihuahua), shred it yourself, and explain why queso fresco cannot melt.Oaxaca is pulled like mozzarella. Jack is Dunn's supermarket melt. Fresco is acid-set and will not flow. Shred the block.
  3. Fold, don't sandwichMix any filling through the cheese, spread it on half of one ten-inch flour tortilla, leave a border, and fold. Name corn masa, blossom, and chicken as later. One tortilla. Half. Border. Fold. Mix fillings through the cheese. Blossom and chicken are later.
  4. Oil, medium, keep it movingFry the fold in two tablespoons of oil on medium heat for about two minutes a side, keep it moving, salt after the flip, and drain.Oil so it puffs. Medium, not high. Two minutes. Flip, salt, two minutes. Drain, then triangles.
  5. Eat it while it stretchesEat the first quesadilla while the crust is still crisp, store leftovers on the two-hour clock, and name masa fry, huitlacoche, and blossom as later work.Eat standing up. Two hours, then 3 to 4 days, reheat to 165. Masa is later. A pale fold is information.

Questions this course answers

Kenji López-Alt says the good way to build a quesadilla is to:

Kenji: the two-tortilla sandwich is almost impossible to flip without dumping the filling. One tortilla, filling on half, fold. Dunn independently landed on the same fold.

In your own words, why does queso fresco refuse to melt in a quesadilla, and what cheese should you use instead?

Achitoff-Gray quoting McGee: when an acid curd is heated, water shakes loose first, not the proteins. Jack, Oaxaca, and mozzarella still have that calcium net, so they sag into a pull.

Match each move to the job it does in tonight's quesadillas Which pairing is right for “shred Jack off a block”?

Fresh shreds melt. The fold is structure. Oil is the crust. Salt is the finish.

Put tonight's weeknight quesadillas in the order that keeps the cheese inside and the crust gold Which order is correct?

Shred first. Fold second. Oil and medium heat third. Drain and cut last.

Why does Niki Achitoff-Gray say young moist cheeses such as Jack and mozzarella melt, while aged Parmesan often breaks?

Cheese is fat and water held by casein. Young moist cheeses keep that emulsion as the net sags. Dry aged cheeses split into grease and a tough knot.

USDA FSIS leftover guidance: after it is cold, a cooked quesadilla keeps in the refrigerator about how many days?

USDA FSIS: leftovers 3 to 4 days in the fridge, or freeze 3 to 4 months. Reheat to 165°F. The two-hour clock starts when the skillet leaves the heat.
