📘 How do you make guacamole that stays green?

You are standing in the chip aisle with a plastic tub of supermarket guacamole in one hand and two dark, pebble-skinned Hass avocados in the other. Someone wants a bowl before the bag is open, and the tub is already winning in their head: c

What you’ll learn

  1. Put the tub backChoose Kenji's pounded four-Hass guacamole over a supermarket tub, Bayless's tomato fold, or Pati's two-avocado mix, and scale a first batch.Put the tub back. Tonight is mashed Hass, a paste of onion and chile, cilantro, lime, and salt. An adult owns the knife. You mash and taste.
  2. The avocado is the houseBuy Hass, press the stem end and the fat end for mashable-soft fruit, cut around the pit with a spoon, and skip watery Florida avocados.Hass. Stem-end give, then fat-end give. Five to seven days from hard. Spoon out the pit. Florida fruit is a salad slice.
  3. Onion, chile, cilantro, limeRinse white onion, start with one serrano with the white ribs cut out, split cilantro into paste and fold, and use lime to finish the avocado, not to stop browning.White onion, rinsed. Heat is in the chile's pale ribs. Cilantro is half paste, half leaf. Lime completes the fruit. Tomato waits.
  4. Pound first, then mashGrind the aromatics so cell walls break, mash with a pestle or whisk until lumpy, season salt then lime, and name oxygen plus polyphenol oxidase as the browning pair.Paste first. Whisk or pestle, not a blender. Salt, then lime. The pit does not save it. Wrap on the mash does.
  5. Eat it while it's greenPress wrap onto leftover mash, follow the two-hour clock for up to three days cold, serve with a chip that can lift it, and name tomatillo guacamole as later work.Wrap on the surface. Two hours, then 3 days cold. Totopos tonight. Tomatillo verde is later. A watery bowl is information.

Questions this course answers

Kenji López-Alt pounds onion, chile, cilantro, and salt into a paste before the avocado goes in because:

Kenji: vegetables pack flavour inside their cells. You have to break the walls by grinding, cooking, or chewing, or a lot of that flavour never reaches the dip.

In your own words, why does leaving the pit in a bowl of guacamole fail to keep it green?

McGee's two bowls, one with a seed and one with a light bulb, browned the same. Kenji's real fix is plastic wrap pressed onto the surface so oxygen cannot reach the mash.

Match each move to the job it does in tonight's guacamole

Paste first, lumps second, wrap third, rinse the onion. That is the whole method.

Put tonight's guacamole in the order that keeps it chunky and seasoned

Paste first so the avocado is last. Taste second. Wrap only if you must wait.

Rick Bayless's mashable-soft avocado is different from a sliceable one because:

Bayless: press the bulbous end, the last place to soften. Sliceable and mashable are about 24 hours apart. Guacamole wants mashable.

USDA FSIS leftover guidance: after it is cold, homemade guacamole keeps in the refrigerator about how many days?

USDA FSIS: leftovers 3 to 4 days in the fridge. MSU Extension says cut avocado 3 to 4 days wrapped. Kenji still wants you to make it right before serving. The two-hour clock starts when the bowl leaves the counter.
