Butter, two sugars, eggs, flour, soda, salt, and chips each have a job. Wakefield printed the crunch cookie in 1938; the bag recipe is that idea in modern amounts.
- Cream it, then stopCream cool butter until pale, add eggs one at a time, and stop stirring once the flour disappears.Creaming is air, not mixing. Start the butter near 60 F. Flour last, chips last, no extra stirs. Melted butter makes a different, denser cookie on purpose.
- The tray and the ovenChill the dough, portion it, and pull the tray when the edges are gold and the centres are still soft.Soda also raises pH so the cookie browns. Thirty minutes in the fridge holds the shape. 375 F, 9 to 11 minutes, two minutes on the sheet.
- The next trayCool the cookies on a rack, troubleshoot the next tray, and choose chewy or crisp on purpose.Two minutes on the sheet, then a rack. Fix heat, chill, or mixing on the next tray. More brown sugar and a shorter bake is the chewy path.
