Why should you stop folding banana bread batter while it still looks a little streaky?

Water lets glutenin and gliadin link into gluten. In a wet banana batter that happens fast. Overmixing builds a tight net, so the loaf chews instead of staying tender. Leftover streaks hydrate in the oven.

In your own words, why does banana bread use baking soda instead of only baking powder, and what does the banana have to do with it?

Sodium bicarbonate plus acid makes carbon dioxide. Ripe bananas and a little brown-sugar molasses supply that acid. Baking powder already contains its own acid, which is why some recipes use both, but tonight the fruit is doing most of that job.

The muffin method keeps gluten from forming too soon. Wet meets dry at the end, and you stop while it still looks messy. Soda starts working as soon as it gets wet, so bake soon.

When should you pull a loaf of banana bread?

Moist crumbs mean the starch has set and a little moisture remains. A wet ribbon is raw batter. A bone-dry pick means you already baked out the tenderness.

Phillips and USDA colleagues found that total sugar jumped from unripe to ripe bananas, then barely changed from ripe to overripe. Why do bakers still wait for black bananas?

Phillips found the big total-sugar jump is unripe to ripe. Past that, you wait for a fork-soft mash and a louder smell. Hamel wants black peels for flavour. ATK still saw fructose climb from lightly speckled to heavily speckled, so the last days are not wasted.
