What is the pale dot in the middle of a piece of al dente pasta?
Water penetrates from the outside in. The centre is the last place to hydrate, so ungelatinised starch there stays opaque — and its disappearance is the most reliable doneness test there is.
Why is durum wheat used for dried pasta rather than bread wheat?
Bread wheat gluten is elastic and extensible so dough can inflate. Durum gluten resists deformation, which is exactly what an extruded shape needs to survive drying, shipping and boiling.
