Sodium and chloride ions loosen the packed proteins in muscle. The looser mesh holds onto water that contracting fibres would otherwise squeeze out during cooking.
What share of seawater's weight is dissolved salts, on average across the open ocean?
About 3.5 per cent, or roughly 35 grams of dissolved salts per kilogram of seawater — enough to make it undrinkable, but far below the roughly 26 per cent of a saturated brine.
