Body comes from gelatin, and gelatin comes from collagen in connective tissue. Lean meat gives flavour but no wobble; feet, wings, knuckles and shanks give both.
Why does a boiled stock come out cloudy?
Clarity is a physical question about what stays suspended. A bare simmer lets particles settle and fat float where you can skim it; a rolling boil keeps everything churning through the liquid.
Put the stages of clarifying a consommé in order
The raft works because the egg proteins coagulate slowly enough to sweep the whole pot on the way up. Starting hot, or boiling later, destroys that.
