🍳 How to make scrambled eggs
Salt the eggs in the bowl, keep the pan polite, and pull them while they still shine. A first plate tonight, with the science that keeps them creamy.

Why should you pull scrambled eggs while they still look a little glossy?
Carryover cooking is real. The pan is still hot after you kill the flame, and the eggs keep setting on the way to the plate. If they already look done in the pan, they will look dry on the toast.
In your own words, why can salting scrambled eggs in the bowl make them more tender, even though salt helps proteins start to bond?
Harold McGee's account, which Daniel Gritzer used to explain his Serious Eats tests, is that salt's ions change the electrical environment. Proteins begin to coagulate at a slightly lower temperature, but they cannot intertwine as tightly, so less water is wrung out.

Daniel Gritzer salted five bowls of scrambled eggs from sixty minutes ahead down to zero minutes. What happened?
Gritzer's side-by-side test at Serious Eats found almost no difference. The longest pre-salt was slightly more tender, the opposite of the kitchen lore.
What does the FDA tell you to do with scrambled eggs and other egg dishes?
The FDA says scrambled eggs should not be runny, and casseroles and other egg dishes should reach 160 degrees Fahrenheit. Keep eggs refrigerated. Do not eat the raw bowl.
