Why does honey not spoil, despite containing a great deal of water?
Water activity measures how much water is free to participate in reactions, not how much is present. In honey almost all of it is tied up by sugar, so microbes cannot draw it out.
Put the stages of dry-curing meat in order
Weight loss is the proxy for water activity, which is why producers weigh rather than guess. Drying too fast seals the surface and traps moisture inside.
Why must low-acid foods like green beans be processed in a pressure canner rather than a boiling water bath?
A boiling pot cannot exceed 100 °C, and the spores tolerate that for hours. A pressure canner reaches around 121 °C, which does destroy them. Acid foods are exempt because botulinum cannot grow below pH 4.6.
