What is the primary reason acidity preserves fermented food?

The lactic acid bacteria tolerate the acid they produce; their competitors mostly cannot. Fermentation does not sterilise anything — it makes the environment hostile to everything except the winners.

Below which pH can Clostridium botulinum not grow?

pH 4.6 is the accepted threshold in food safety regulation. Vegetable ferments pass well below it early, which is why they are considered a safe method while unprocessed low-acid canning is not.

Put the stages of a cabbage ferment in order

It is a relay, not a single population. Each group changes the environment in a way that favours the next group and disfavours itself.

Fermentation is a category of process, not a single organism. Bacteria, yeasts and moulds all take part, and vinegar is the outlier that requires air.

Casein micelles repel each other because they share the same charge. Around pH 4.6 that repulsion disappears and the clusters aggregate into a gel that traps all the original water.
