What is a candy thermometer really telling you about a sugar syrup?
A syrup boils at a temperature set by its sugar-to-water ratio. As water evaporates the ratio shifts and the boiling point climbs, so temperature is a proxy for concentration and therefore for the final texture.
Put the stages of caramelisation in order
Split, dehydrate, fragment, polymerise. Aroma comes mostly from the small fragments; colour comes from the large molecules built out of them.
Why does adding a spoonful of glucose syrup or a squeeze of lemon help prevent a caramel from seizing?
Crystallisation needs identical molecules stacking into a regular lattice. Introducing other sugars, or acid that splits sucrose into two different ones, gives the lattice pieces that do not fit.
Around what temperature does sugar begin to caramelise and take on colour?
Colour and aroma appear from roughly 160 °C upward for sucrose — well above the hard-crack stage, which is why a clear brittle toffee can be made without any caramel flavour at all.
