Why can you cook an egg so that the yolk is thick but the white is still loose?
White begins thickening around 62 °C and firms by about 65; yolk moves to a custard texture around 65. Holding an egg in that narrow band gives a set yolk inside a barely-set white.
Why does a speck of yolk stop egg whites from whipping?
A foam depends on unfolded proteins bonding into a continuous skin at each bubble's surface. Fat inserts itself between them and prevents that skin forming.
