Browning needs a dry surface and real heat. How radiation, convection and evaporation decide your crust.

Why can boiled or poached food never brown, no matter how long you cook it?
Energy going into a wet surface is spent evaporating water rather than raising temperature. Browning reactions only become brisk well above the boiling point, so the surface has to dry out first.
Match each cooking situation to the heat transfer mode that dominates
Most methods mix all three, but knowing which dominates predicts the result: contact gives sharp crusts, moving air gives even colour, radiation gives intense one-sided char.
Your roasted vegetables always come out pale and soft rather than browned. What is the most likely cause?
Water leaving the food has to get away. On a crowded tray the humidity around the vegetables stays high, the surfaces never dry, and you are steaming inside a hot oven.
