Acid breaks the weak bonds holding a protein in its folded shape. The unfolded chains tangle together, turning translucent tissue opaque and firm - visually identical to cooking, with no rise in temperature.

Below roughly what pH can Clostridium botulinum not grow - the threshold that divides acid from low-acid foods in canning?

pH 4.6. Foods below it can be processed in a boiling water bath; foods above it need pressure canning, which is why tested recipes add acid to borderline foods like tomatoes.
