Blonder, reported by AmazingRibs: 30 min 3–4 mm, 1 h 5–6 mm, 2 h 7 mm, 4 h 10 mm, 8 h 13 mm, 24 h 17 mm. Salt still had not travelled an inch.

Match each marinade part to what the measurements actually show

Goldwyn: salt is two atoms; sucrose is 45; allicin is 18. Oil and water do not mix. McGee: acid past two hours meals the rim. Kurti: 10 mm of dyed wine after 36 hours.

Cara De Silva, Los Angeles Times, 1993: after 36 hours Kurti's blue wine had penetrated 10 millimetres (0.39 inch). That is wine, not rosemary, and still not the centre of a roast.

Put Goldwyn and López-Alt's useful marinade in the order that actually gets flavour where you chew

Thickness is the hidden ingredient. Skirt can be stained through. A roast cannot, unless you cut doors. Salt walks; acid and enzymes chew the rim; the grill writes on the coat.

In your own words, why can a two-hour red-wine marinade still make a grilled steak taste richer if the wine never reached the centre?

McGee to the Los Angeles Times: unless you have days, marinating gives you flavour, and that flavour is right where meat meets the fire. A wine-marinated steak tastes more mouth-filling because the painted face becomes hundreds of new aromatic compounds, not because the centre drank.
