Flooding is weed control. Rice can grow on dry land, but few weeds survive submersion, so a flooded field is one the crop has almost to itself.

Amylose is a long straight chain that reassociates as rice cools, firming the grain. Amylopectin is branched, holds water and keeps grains soft and clinging.
