Why is Japanese short-grain rice sticky, and why is that prized?
Japonica rice runs about 18–20 per cent amylose against roughly 23–31 per cent for long-grain indica. Less amylose and more branched amylopectin means grains that cling rather than scatter — easy to lift with chopsticks, and essential to pressed sushi.
What two ingredients make classic ichiban dashi, and what is the key rule?
Dashi is made in minutes from kombu and katsuobushi. The kombu must be steeped without a hard boil, which would turn the broth cloudy and bitter — maximum flavour from minimum intervention.
