Why does cooking increase the energy you can get from a starchy root?

Cooking does part of the digestion in advance. Gelatinised starch and unfolded protein are far more accessible to digestive enzymes than the raw forms.

What is the central difficulty with the cooking hypothesis?

Early Homo's smaller teeth, reduced gut and larger brain appear around 1.8 million years ago, while clear evidence of routine fire use begins hundreds of thousands of years later. Ash preserves badly, so the gap may be a gap in the record — or a real problem for the theory.
