🌾 Gluten-free baking: what flour was actually doing
Swap the bag and the loaf collapses. Wheat flour was not a flavour. It was a protein net, and gluten-free baking is the long job of hiring a replacement.

Both Codex and the FDA use 20 mg/kg, which is 20 ppm. It is a validated-test line, not zero, and you still may not add a gluten grain on purpose.
