🌡︠Sous vide: cooking by temperature instead of time
A grill cooks by time and hope. A bath set to 54°C cannot overcook the centre  it can only wait for the edge to catch up.

Sous vide sets the water to the final doneness. Heat can only flow until the food matches the bath. A grill is hundreds of degrees hotter, so the outside keeps climbing.
What physical fact makes a water bath heat food so much faster than an oven at the same temperature?
Baldwin: water conducts heat about 23 times better than air. Circulation then keeps the whole bath within a fraction of a degree.

Put a safe cook-chill sequence in the order the spores require
Pasteurisation leaves spores. Slow cooling is how they wake. Baldwin: ice water, then a short fridge life or the freezer.
