🥩 Aging beef: enzymes, dry-aging and the crust
The steak you pay for is under a hide of jerky. Enzymes cut the muscle. The crust is the bill you throw away.

Dry means air and a crust you trim. Wet means a bag. Only fat, usually bone-in loins and ribs, can pay the rent.

Put postmortem beef in the order the chemistry actually forces
Rigor first, then the early calpain burst, then the flattening tenderness curve. The crust is only the dry-aged extra, and it is waste.
Kenji aged chunks of beef and measured how much volume the interior still displaced.
Kenji: about 4% interior volume at 21 days, 5% at 60. The famous 30% is untrimmed bone-in weight, mostly the hide.
