The tongue senses only five basic tastes; cherry, vanilla, leather and the rest are aromas reaching the nose retronasally. Block the nose and they vanish.
Where does red wine get its color?
Most grape juice is clear; color and tannin come from fermenting the juice in contact with dark skins. Press the skins off early and even a dark grape makes white wine.
