  1. Air, then a skinDefine a foam as gas in liquid and treat whipping as building a protein skin around each bubble, from shear to soft peak to stiff peak.A whisk is a bubble mill. Soft and stiff peaks are how tight the film has become. Without a skin, air in water is a bath that lasts seconds.

A net of unfolded proteinPlace egg white as a dilute protein solution, name ovalbumin as the bulk protein, and treat overwhipping as a net that has bonded too tightly and wrung itself out.About 90 percent water, 10 percent protein. A foam is gas in liquid. The whisk creates the bubbles; proteins (in egg white) or partially coalesced fat (in cream) keep the films from draining and rupturing immediately.

About how many grams of protein does USDA list in 100 grams of raw egg white?

USDA FoodData Central puts protein near 10.9 g per 100 g of raw white. McGee's kitchen figure of 10 percent is the same fact rounded for a cook.

Match each addition to what it does in an egg-white foam

Fat is a contaminant at the bubble surface. Sugar is a thickener if you time it. Acid is Child's everyday stand-in for copper. Plastic remembers grease.

Why did McGee drop the 1984 ovotransferrin explanation?

A sterling bowl, then a copper-free silver nitrate test, both gave stable white foam. The protein that binds copper does not bind silver, so that cannot be the necessary step.

The tool is eighteenth-century. The glass-versus-copper experiment is early 1980s. Nature is 1984. The silver disproof, and the 2004 rewrite, come later.
