What is the single counterintuitive idea this whole course is built around?

The through-line is that a sail is an airfoil generating lift like an airplane wing — which is why a boat can sail toward the wind, and why 'catching the wind like a parachute' is the wrong model.

Air flowing across the curved, leeward side of a sail speeds up. According to the wing model, this:

Faster-moving air has lower pressure. The pressure difference between the two sides pulls the sail toward the low-pressure (leeward) side — that pull is lift, the same force that lifts a plane.

When sailing toward the wind, most of the sail's force points sideways. What keeps the boat from just skidding sideways?

The keel is a fin that barely resists forward motion but strongly resists sideways motion. With the sail pushing sideways-and-forward and the keel blocking the sideways part, the boat squirts forward.

On which point of sail is a typical sailboat usually fastest?

A reach lets the sail work as an efficient wing, so most boats are fastest there. Dead downwind is merely a push and the boat can't outrun the wind; close-hauled sacrifices speed to gain upwind angle.

The 'no-go zone' is the arc of directions where:

Point too directly into the wind (inside about 45°) and the sail just flaps, making no lift, so the boat coasts to a stop. You must stay outside this zone to keep the wing working.
